Mmm Yummy - Pumpkin Bars with Chocolate Chips

I had a couple requests for this recipe (from this post), so here it is:

Pumpkin Chocolate Chip Bars

1 cup all purpose flour
1 cup whole wheat flour
3/4 cup sugar (I use a bit less)
1 cup nuts (pecans or walnuts are really good)
2 tsps baking powder
1 tsp ground cinnamon
1/2 tsp baking soda
1/2 tsp salt
4 large eggs, beaten
1 can (15 ounces) pumpkin
1/2 canola oil
1/4 cup lowfat milk
1/2 cup mini chocolate chips

1.Heat oven to 350. Lightly oil a 15 x 10 inch pan.
2. Mix dry ingredients in bowl.
3. Mix eggs, pumkin, oil, milk bowl. Stir in dry ingredients. Add chocolate chips and nuts.
4. Spread batter into pan and bake 25 minutes or until a toothpick comes out clean.
5. Cool and cut into bars.

Enjoy!!!!
Ps. I like to freeze them in ziploc bags to pack for my kids lunches. My boys love them!

Thanks for posting this - I am going to make it tonight! I just bought a can of pumpkin on clearance last week, and now I know what to do with it! I like that pumpkin itself is healthy and it tastes good with whole wheat so it's not a dessert I feel too guilty about!

Thanks Jan, I hope you enjoy them! They really are pretty healthy. I have even let me kids have them for breakfast before. With a bit of peanut butter or cream cheese on top they are a pretty well balanced meal. ;-)
